Super Salads

The Carpenter and I have been making quite a few ‘super salads’ for dinner lately.  Rather I have been making them while he has been in the workshop building his latest wood project that I will discuss in my next post.  On these late dinner nights I need something that I can easily prepare, that I don’t worry about getting cold before he comes in because dinner time is a bit unpredictable.

So what is a ‘super salad?

  • Contains hearty leafy greens
  • Variety of colorful veggies
  • Plant-based fats and/or protein
  • Different textures
  • Overall has very nutrient dense foods

  • Combo of leafy greens, I used spinach and romaine for this one
  • 2-3 green onions, chopped
  • 1 red, yellow or orange pepper, chopped
  • ½ cup of red cabbage, thinly sliced
  • 3 chopped carrots
  • 2 tomatoes, I used heritage garden tomatoes
  • 1-2 avocados
  • Sprinkling of hemp seeds (can also use other nuts and seeds)
  • Dressing:
  • Apple cider vinegar (desired amount)
  • Olive oil (desired amount)
  1. I like to make my super salad on a large platter because it looks so appetizing this way.
  2. Chop the greens and toss together and layer on the platter first. Cut up the rest of the veggies and distribute each veggie evenly over the greens, tomatoes on the side. Drizzle your desired amount of apple cider vinegar and olive oil over the entire salad. Top with hemp seeds or other nuts and seeds of your choice. Half the avocado(s), fill individual salad bowls and top each with ½ an avocado.
